Q: Can you describe the story behind your restaurant's name and what it represents?

A: Growing up in a family of restauranteurs, I was fortunate to develop a passion for dining and traveling to discover cuisine from a young age. In 2014 I took a solo trip to Copenhagen, Denmark because I was fascinated by the culinary scene. "Vesterbro" is a district of Copenhagen. This former meatpacking district was revived with the help and hospitality of local restaurants and cafe culture. Carrying the tradition of Danish simplicity, the concept of VESTER was born. I didn't open the cafe until 2018 but since the beginning, we value quality seasonal, simplistic and mindful eating.

Q: As a restaurant owner, what advice do you have for other women looking to follow in your footsteps?

A: Always follow your gut instincts - sometimes there is no "right" answer. Identify your goals and work backwards from there. Be fluid and stay open, always learning and listening. 

Q: How do you envision the future of women in restaurant owners and entrepreneurship evolving in the coming years?

A: I really hope that there will be more room and encouragement for it, whether it be corporations or the government. Communities benefit when there is female leadership, regardless of the industry. When a woman has decision making power and money in her pocket, everybody (families, communities, the young and elderly) are taken into account. 

Q: What inspired your menu? 

A: VESTER is "internationally inspired" by my travels and places I've loved. The food is meant to be simple and approachable.  

Q: What makes your business unique? 

A: There is something at VESTER for everybody - you can really make it your own experience. Catch up with a friend or business colleague over coffee and/or lunch. Meet a first date for an aperol spritz and fries after work. The atmosphere supports all gatherings! 

Q: Of all the dishes you offer, which do you recommend for a first time customer? 

A: VESTER Signature avocado toast OR the breakfast burrito OR turkey brie with fries! 

Q: What do you love most about working with Sharebite? 

A: We love spreading VESTER and Sharebite allows us to expand our client base. They're easy to work with and do a great job supporting local, small businesses.
